Beware of Canola Oil
The widespread use of canola oil has been a significant factor in the rise of obesity in America. The canola and big agribusiness lobbying and marketing arms have created an atmosphere where we’ve been duped into thinking it’s somehow good for us. The truth about Canola Oil is quite different and for some people with vested interests in the proliferation of canola oil, annoyingly inconvenient.
Canola oil shares the worst properties a cooking oil can have along with similar oils like vegetable oil, soybean oil, and corn oil. It has a highly polyunsaturated component which is very unstable under light, heat, and pressure, thus becoming oxidized and creating free radicals in your body. Free radicals then cause damage to the body at the cellular level, and can even lead to cancer.
Canola oil, unlike olive oil which needs no molecular altering level of heat for extraction, is extracted in what could only be called a marvel of modern technology- high heat, pressure, and petroleum solvents like hexane. Who wants petroleum for dinner?
